White Bean and Kale Soup [Meal Prep]

Soup is one of the best things you can meal prep for the week. Not only is this soup extremely flavorful and filling, but it is super easy to make! You pretty much add everything into the pot and it cooks in two hours! I like to eat my soup with a side of crisp lettuce and a squeeze of lemon.

White Bean and Kale Soup [Meal Prep]

Ingredients
  

  • 1 Large Onion diced
  • 2 28 Ounce Canned Diced Tomatoes
  • 1 15 Ounce Canned Cannellini Beans Rinsed
  • 1 cup quinoa
  • 2 Medium Potatoes - around 5 ounces each, cut in 2 inch chunks
  • 1 Head Kale cut
  • 3 Medium Carrots Chopped
  • Salt & Pepper to Taste

Instructions
 

  • In a large pot over medium high heat, cook onions with a splash of water. Keep an eye on the onions and stir for the next 5 minutes while adding water to prevent burning.
  • Add diced tomatoes and canned beans to pot along with 5 cups of water and bring to a boil.
  • Add kale, potatoes, carrots and continue cooking for 10 minutes. Add salt and pepper to taste.
  • Add quinoa, reduce heat to low, cover and cook for 2 hours, stirring occasionally and adding water as needed.
