Ingredients
  

  • 1 Cup Quick Cooking Brown Rice (uncooked)
  • 15 Ounces Canned Black Beans drained and rinsed
  • 1 Cup Frozen Fire Roasted Corn defrosted
  • .5 Small White Onion diced
  • 15 Large Canned Black Olives sliced
  • .5 Pint Grape Tomatoes cut in half
  • 1 Medium Avocado
  • .25 Cup Unsweetened Original Almond Milk
  • 3 Limes Juiced
  • .5 Cup Cilantro
  • 1 Teaspoon Garlic Powder
  • 2 Teaspoons Blue Agave Syrup
  • Salt & Pepper to taste

Instructions
 

  • Cook brown rice according to instructions
  • For the Dressing: in a food processor, add Avocado, Cilantro, Lime Juice, Almond Milk, Garlic Powder, and Salt & Pepper to Taste. Blend on high until a smooth consistency is reached.
  • One rice is done cooking, assemble in bowl and top with Beans, Corn, Onions, Olives
